MEATBALL CURRY
Ghee
2 medium onions, chopped
1 clove garlic, crushed
1 tablespoon grated fresh ginger
½ teaspoon ground turmeric
½ teaspoon chilli powder
1 teaspoon garam masala
2 medium tomatoes, roughly chopped
1 tablespoon, chopped fresh mint
Meatballs
750 gm minced beef
¼ cup, chopped fresh coriander
1 medium onion, chopped
1 tablespoon, grated fresh ginger
2 cloves garlic, crushed
½ teaspoon, garam masala
1 small fresh red chilli, seeded, chopped
Meatballs:
Combine all ingredients in bowl, mix well. Roll level tablespoons of mixture into balls.
Heat ghee in pan, add meatballs in batches, cook, turning, until well browned. Drain on absorbent paper.
Add onions, garlic and ginger to same pan, cook, stirring, until onions are soft. Add spices, cook, stirring, until fragrant. Stir in tomatoes and meatballs, cook, covered, about 20 minutes or until meatballs are tender. Stir in mint. Serve with Thai Rice.
NOTE: This is quite spicy, but if you prefer it hotter, just add seeds from the chilli, or extra chillis to the sauce.
