Did this yesterday, super.
Marzipan and butter biscuits.
7 oz soft marg or butter
3 oz icing sugar
2 oz marzipan (roughly chopped)
9 oz plain flour
1 egg yolk.
5 drops almond essence.(add to beaten egg yolk.)
spare caster sugar.
Choc. (optional)
Cream butter and sugar until light and fluffy.
beat in the chopped marzipan
add the egg yolk mix.
Add flour and mix well.
Divide mix into three portions and wrap in greaseproof paper
leave in fridge for 1/2 to 1 hour.
Using one portion, pinch a piece of mix, size of a walnut and shape by rolling in palms.
Place these on a greased tray or parchment.
Dip a fork in a cup of milk and press each biscuit to make an indent..
sprinkle with caster sugar.
Bake - pre-heated oven 200c. 400f. gas 6
Approx 10 mins. until lightly browned.
Leave on tray to cool for five minutes then place on wire tray.
When cold dip each in melted chocolate to cover half the biscuit.
This is optional, I just did it to make it interesting, very good taste.
The remaining portions will keep for up to a week in the fridge.
