Coconut and Cardamon Rice Pudding

Tried this today, it is scrumptious, dairy-free too!

2oz pudding rice
8-10 cardomon pods, gently bruised with end of a rolling pin
slivers of lemon zest
400ml tin coconut milk

preheat oven to gas2/150c

put all ingredients in a shallow baking dish and mix gently
Cover with foil and bake for an hour, stirring once. After an hour uncover and cook for a further 30-45 minutes until rice is soft.

Sounds good to me, though Dave tell me off for adulterating recipes. :sad:

I have an allergy to cow's milk so I'm always having to adapt recipes or find something a bit different.
The worst rice pud I made was with rice milk, yuk

My son is also allergic to dairy produce and I have made puddings with coconut milk before. Soya milk is disgusting in most things, even Yorkshire pud.
