Peanut brittle. For sweet lovers.

Had a call from my daughter requesting peanut brittle I used to make when she was small. Made it yesterday, it's easy and superb. Mainly for people with a sweet tooth.

8 oz granulated sugar
8 oz soft light brown sugar
2 oz unsalted butter
1 gill ( 5 fl.oz) water
1 tablespoon golden syrup
pinch of cream of tartar
1 teaspoon vinegar

4 - 6 oz peanuts

Put first 7 items in a large saucepan and very slowly allow the sugar to dissolve, stirring occasionally.
When all dissolved turn up heat and continue boiling until heat reaches 290o. (takes about 30 mins.)

NOTE
Needs watching for a time as the mix rises in the saucepan.

Remove from heat and add nuts, stir in well.
Tip all onto a greased sandwich tray.
Leave until almost cold and mark in squares.
