Lemon Rosemary Salmon

Lemon Rosemary Salmon
Salmon fillets are baked with lemon, rosemary, olive oil, and coarse salt in this simple preparation.

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready In: 30 Minutes
Yields: 2 servings
INGREDIENTS
1 lemon, thinly sliced
4 sprigs fresh rosemary
2 salmon fillets, bones and skin removed
coarse salt to taste
1 tablespoon olive oil, or as needed
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C).
2. Arrange half the lemon slices in a single layer in a baking dish.
3. Layer with 2 sprigs rosemary, and top with salmon fillets.
4. Sprinkle salmon with salt, layer with remaining rosemary sprigs, and top with remaining lemon slices.
5. Drizzle with olive oil.
6. Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.
NOTE
A better way to concentrate the flavours is to arrange on a sheet of cooking foil
and fold to form a sealed envelope.

Accompany with fresh French bread and a Caesar salad.
Serve with a dry crisp white wine Muscadet is ideal.
