Tasty Pork Chops

This is not my recipe but well worth trying.

2 tablespoons oil
4 - boned pork loin chops
1 clove garlic, halved
1 large green pepper, cored, seeded and thinly sliced.
1 x 8oz tin chopped tomatoes
6 oz button mushrooms
seasoning

Heat oil in pan, adding garlic.
Allow garlic to brown the discard it.
Add chops and lightly brown each side.
Season to taste.
Cover and cook very gently for 15 minutes.
Remove chops from pan and keep them hot

Add pepper and tomatoes with the juices
Stir to break up any large pieces of tomato.
Cover and cook gently for 15 minutes.

Stir in the mushrooms and check seasoning.
Cover and cook for 15 minutes

Return chops to pan, baste well and simmer until heated through.
Serve the chops with the sauce spooned over top.
