Root ginger can indeed be used in cooking as per Rowan. Try 1/2" grated in casserole of chicken. stir fry dishes, Indian and Arab dishes. Also used in rabbit casserole, shell fish dishes, with cooked cabbage dishes and plum or greengage crumble. Best to start with small amount as this is very pungent. (lovely grub) If you have dried root it will keep for up to six weeks if tightly wrapped and kept in a fridge.Hope this helps, cheers Penny.
