This recipe was given to me by a local master baker.

Mr Olley’s Bread Recipe


13/4 lb of the strongest flour you can get. (usually from a baker)
Half an oz of salt
2 teaspoons of olive oil
500mls tepid water
1 sachet of yeast.

Put in bread machine and set for dough.
When ready take out knock down and knead for three to five minutes.
Put into a 2lb bread tin
Allow to rise
Put in pre heated oven (220 degrees centigrade) for 40 to 45 minutes.

If you "Bake" the bread in the bread machine it steams more than it bakes due to the small size of the cooking chamber hence cooking in the oven.

The bread is then cooled sliced and frozen this way it stays fresh without the use of preservatives. Slices are taken out as needed and defrosted in the microwave. The fresh baked aroma coming from the microwave never fails to bring back memories of my youth.

I gave my machine away. Didn't like the bread very much - tried all sorts, but couldn't be bothered in the end.

What a pity about the bread machine Mazzy, I have two and am forever making bread and rolls for me and the family and friends. Would not like to be without it now. Always reluctant to eat bread when away on holiday. cheers Penny.

I liked the flavoured bread I made, especially the sun dried tomato one, but Trev didn't like ie atall, and he eats most of the bread! I gave it to my step daughterand, as far as I know, it is still going strong.
