Friendship cake

Postby Penny » Tue Aug 01, 2006 12:17 pm

Anyone remember this. I was looking for something early on and came across an old recipe for a friendship cake. Used to make it years ago. It's the one where you give a cup of mix to a friend and they feed it for a week, make a cake and pass on a cup to someone else. Can't even remember if I liked it or not but sounds interesting. Might have another go. cheers Penny :rolleye11:

FRIENSHIP CAKE.

Start as soon as possible
Do not put mixture in fridge
Do not use a mixer
Use same size cup each time
Use a large mixing bowl, the mix grows all the time.

Day 1. add cup of plain flour
add 1 cup pf granulated sugar
add 1 cup of milk
stir well and cover loosely with tea towel.

Day 2. stir well
Day 3. do nothing
Day 4. do nothing
Day 5. do as day 1
Day 6. stir well
Day 7. do nothing
day 8. do nothing
day 9. do nothing
day 10..stir well, and remove 3 cups of mixture placing each cup in separate receptacle.
Give these to friends together with a copy of the above instructions., plus method of cooking.

To the amount you have left add the following:

1 cup of sugar
2 tspn vanilla essence
2 heaped tspn baking powder
1 or 2 coooking apples cut into chunkcs (not cooked)
2 eggs

2/3 cup vegetable oil
1/2 cup chopped walnuts (optional)
2 heaped tspn cinnamon
2 cups plain flour
1/2 tspn salt
1/2 cup sultanas

Mix everything together and put in a large greased roasting tin, approx 7 x 11"
Bake at 350f, 180C gas 4. for 40 - 50 min.
When cold cut into fingers or squares.

This cake will go on for ever because the mixture contains living yeast, which will grow everytime sugar is added.

Sounds complicated but is actually very simple. cheers Penny.
