To the amount you have left add the following:
1 cup of sugar
2 tspn vanilla essence
2 heaped tspn baking powder
1 or 2 coooking apples cut into chunkcs (not cooked)
2 eggs
2/3 cup vegetable oil
1/2 cup chopped walnuts (optional)
2 heaped tspn cinnamon
2 cups plain flour
1/2 tspn salt
1/2 cup sultanas
Mix everything together and put in a large greased roasting tin, approx 7 x 11"
Bake at 350f, 180C gas 4. for 40 - 50 min.
When cold cut into fingers or squares.
This cake will go on for ever because the mixture contains living yeast, which will grow everytime sugar is added.
Sounds complicated but is actually very simple. cheers Penny.
