Easy tea/fruit loaf.

Can't remember if I put this on before but making four of them today decided to share again.
Very simple and easy.

In a large bowl put:-

1 cup of cold tea
1 cup of sugar
12 oz mixed fruit ( I use sultanas and raisins)
1 oz chopped nuts (optional)
stir to distribute sugar


Leave overnight

NEXT DAY - ADD

1 beaten egg
8 oz self raising flour

Mix well and put in a greased 1lb loaf tin.

Pre heated oven 325 gas 4

1and 1/4 hours.

IMPORTANT
LEAVE IN TIN 1/2 Hour before turning out.

When cold, slice and spread with butter (optional)

This freezes very well so I always make four at a time.

I use to do something like that in my 'days in the kitchen'
use to call it 'Fat Free Cake'
but putting butter on it like yours would rule that name out :roflmao:

I prefer tea loaf without butter - just the way it comes - a loaf at a time!! :oops:
