Surpriiiiiiise!!!

With humble apologies for the US recipe, but I'm sure those that want it will sort that no worries! :exactly:

DECADENT CHOCOLATE CAKE (extreeemly moreish!!!!!).

1 cup boiling water
3 oz unsweetened chocolate
8 tablespoons sweet butter
1 tablespoon vanilla extract
2 cups granulated sugar
2 eggs, separated
1 teaspoon baking soda
½ cup dairy sour cream
2 cups less 2 tablespoons unbleached, all purpose flour, sifted
1 teaspoon baking powder.

Preheat oven to 350F. Grease and flour 10’’ tube pan.

Pour boiling water over chocolate and butter, let stand until melted. Stir in vanilla and sugar, then whisk in egg yolks, one at a time, blending well.

Mix soda and sour cream. Whisk into chocolate mixture.

Sift flour and baking powder together, add to batter, mix thoroughly.

Beat egg whites until stiff but not too dry. Stir ¼ egg white into batter thoroughly. Scoop remaining egg whites on top and fold together gently.

Pour batter into pan. Bake for 40-50 minutes on the middle rack until sides pull away or cake tester comes out clean. Cool for 10 minutes, un-mould and cool completely before frosting.

CHOCOLATE FROSTING

2 tablespoons sweet butter
¾ cup semi sweet chocolate chips
6 tablespoons heavy cream
1 ¼ cup powdered (icing) sugar
1 teaspoon vanilla extract

Place all ingredients in a heavy saucepan over low heat. Whisk until smooth. Cool slightly. Add more sugar if necessary to spreading consistency. Spread on cake while icing is still warm.

It looks wonderful but I'm not allowed to eat such things. Diabetes!

Oh sorry, I didn't know that Daisy :oops:

However, they do say the healthiest diet you can eat is a diabetic diet. I have seriously thought of buying a book on that and following it to see if I do feel better for it. Do you have any thoughts on that theory?

The strange thing is that I used to suffer with Irritable Bowel Syndrome, but when I cut sugar out of my diet it disappeared.
The GI diet is nothing new, it is the diet that diabetics are encouraged to follow.

I ordered the book from Amazon on Tuesday, hopefully it will be here by Saturday. If there are any recipes that look particularly good I will post them here
