Tiramisu with Fruit.
Ingredients.
200g Mascarpone Cheese
2 tblsp Castor Sugar
200g Ready to serve Custard (Chilled)
6 tblsp White Rum
500g Fresh ripe Strawberries
3 tblsp Whipped Cream
10 Amaretti Biscuits, roughly crumbled
200ml Apple Juice
25 Sponge fingers.
Method.
1. Place the mascarpone in a bowl and soften with a fork. Add the sugar, custard and 1 tbsp rum and mix well together.
2. Chop 1/4 of the strawberries very small and fold gently into the above mixture, add 1/3 of the biscuits and the whipped cream.
3. Mix remaining rum with apple juice. Then slice remaining strawberries - leaving a few whole for decoration.
4. Get your serving dish, and dip enough sponge fingers into the rum/apple juice mix to cover the bottom of the bowl, add a layer of sliced strawberries, then cover this with a layer of the mascarpone mix. Repeat this process until the dish is filled, ending with a layer of the mascarpone mix.
5. Decorate with the remaining crumbled biscuits, and the reserved strawberries.
Chill for at least 5 hours before serving.
