Don't bother Rowan, would not recommend them. They are like huge yellow pears with a very (very )hard skin. Smell very nice. The old recipe I found said peel and core. My god, took me for ever to get the peel off, had to use a potato scraper in the end. Nearly bent my thumb off trying to cut out the core. The next step was, slice the fruit very finely. My fingers were so worn out by that time that I decided to cheat and put them through the mincer. Clogged the thing up, the fruit was so tough. Finally managed after cutting the stuff in 1/2 pieces. Did the cooking and at last managed to get the stuff into the jars. Hubby, my taster, said, quite nice but bitty. I tasted it and must admit it is quite nice but definitely not worth all the bother. My friend, who had given me the fruit said that people used to use them a lot but don't bother these days. Can understand why. Little does she know that she is getting most of it next week.Anybody want a jar. Am handing it out, hopefully to people who will like it. I will stick to my own marmalade after this. cheers Penny.
