Quince marmalade

Have been given some quinces today so am about to make quince marmalade. Anyone done or tasted this. cheers Penny.

I've never even seen a quince Penny - I must hunt them down to find out what they are like.

Don't bother Rowan, would not recommend them. They are like huge yellow pears with a very (very )hard skin. Smell very nice. The old recipe I found said peel and core. My god, took me for ever to get the peel off, had to use a potato scraper in the end. Nearly bent my thumb off trying to cut out the core. The next step was, slice the fruit very finely. My fingers were so worn out by that time that I decided to cheat and put them through the mincer. Clogged the thing up, the fruit was so tough. Finally managed after cutting the stuff in 1/2 pieces. Did the cooking and at last managed to get the stuff into the jars. Hubby, my taster, said, quite nice but bitty. I tasted it and must admit it is quite nice but definitely not worth all the bother. My friend, who had given me the fruit said that people used to use them a lot but don't bother these days. Can understand why. Little does she know that she is getting most of it next week.Anybody want a jar. Am handing it out, hopefully to people who will like it. I will stick to my own marmalade after this. cheers Penny. :rolleye11:

Well I've got a Quince tree/bush with masses of the things and I must admit I've never known what to do with them :roll:
By the sound of it I'm glad I left 'em alone!!

Quince Marmalade.

Just for information, this is the recipe for quinces.

1 LB QUINCES
1/2 PINT WATER
11/4 LB SUGAR
JUICE OF 1 LEMON

Peel and core quinces into small even pieces
( I minced)
Put into a pan with the water
Simmer gently for about 45 mins.
(if quinces are very hard a litle more water may be needed)
Add the sugar and lemon juice, stir until dissolved.
Boil until set ( approx 10 - 15 mins)


Quince and apple jelly.
1lb apples
1 lb quinces
sugar (see method for amount)
11/4 pints water (for very hard fruit 11/2 pints water)

Do not peel. Just cut up small
simmer with the water until very soft
Strain through jelly bag
Allow 1 lb sugar to each pint of juice
stir until dissolved
Boil rapidly to set

Hello Penny. I made Quince Jelly last week. as you say they are hard to peel so I don't bother.
I just °Top and Tail° them, cut into bits and cook for about 90 minutes then strain. add sugar and lemon to the juice.
It jellies very quickly.
I love it. We call them Quitten.

Thanks Doreen. Yes, I put the recipe on for quince jelly which does not require peeling. Unfortunaely marmalade has to be done without the peel and as this was such an awul job will stick to my orancg marmalade in furture. cheers Penny. :grouphug:
