Mars Bar Mousse

Especially for the chocoholics here.


Mars Bar mousse
Ingredients
4 standard (65g) Mars bars, chopped into pieces
3 tbsp milk
4 tbsp cocoa powder
whites of 3 large eggs
chocolate shavings to decorate
Method
Step 1
Put the Mars bars, milk and cocoa in a heavy-based saucepan. Cook over a very gentle heat, stirring constantly until the chocolate has melted. Transfer to a bowl and leave to cool for 15 minutes, whisking frequently with a wire whisk t blend in any pieces of fudge that rise to the surface leaving a smooth mixture.
Step 2
Whisk the egg whites in a separate bowl until peaking softly. Using a metal spoon, fold a quarter of the whites into the chocolate sauce to lighten it, then fold in the remainder.
Step 3
Turn into the mixture into small cups, glasses, ramekins or a bowl and chill in the fridge to set, for at least 2 hours before serving. Sprinkle with the chocolate shavings.
Chef's tip
Most chocolate mousses made with bitter dark chocolate and they're not always popular with children but these are made with Mars bars so they taste mild and fudgy and everyone loves them.
Please note this recipe contains raw eggs.

4 Mars bars? - oh goody, they come in packets of 6 don't they?...............
