I bought some dried Apricots at 'Julian Graves' I have used some of them in muffins, cakes etc, and just eating them as they are. they are jucier than dried ones, anywhere else.

I still have a lot left and thought of bottling them, then I thought would it be alright to soak them overnight, put them in bottles and pour Brandy or Port or anything else over them, and that would be that.

Who knows? Help please?

I think if you soak them in water Jo, they will be too wet when added to alcohol and would start to ferment. I buy them and add them to my own home made muesli. Dried apricots also make the most wonderful jam.

You might get some ideas here.

Apart from the usual jams, preserves etc. these fruits can be poached in white wine. Also a very good way to use them is to stuff a loin of pork, and also use in lamb stew. Another good pudding is to line a basin with slices of wholemeal bread (as summer pudding) and fill with chopped apricots. this is sometime used instead of christmas pudding. cheers Penny.

Thanks June....sent the site home for a look.

Puddings as such a constant never took root over here.. odd, isn't it?

It took me yrs. to like any fruit with meat and I'm still very selective.
Sweet and sour pork....or
I have found a recipe I like that calls for some raisins with chicken and rice... Shall post it.

I am going to try all your ideas. Mooching around I saw a recipe for Leek and Apricots, and have forgotten where I had seen it, but I can imagine what they would have used with them, so i shall try that as well.
