Mock crab

Something new to try.

1 small tin chopped tomatoes
2 eggs
knob of butter
small fillet of cod.

Whisk tomatoes and eggs in pan and allow to warm gently
In another pan melt butter
Flake the cod very finely and add to the tomato mix
Put all the mix in pan with the butter and cook gently for approx 10 mins.
allow to cool.

Can you substitute haddock for cod Penny - I find cod far too fishy for me.

Haven't tried it but would think any white fish would do. cheers Penny :grouphug:
