Coconut and choc macaroons

8 oz grated coconut
2 egg whites
8 oz caster sugar
1 oz plain flour
1 oz ground almond
2 tablespoons milk
plain choc.

Whisk egg whites until stiff (the egg whites I mean)
Add sugar gradually
Add ground almond
Sift flour and fold into the mix
Add coconut
Add milk and mix

In spoonfuls, size of large walnut, put on baking tray covered with parchment
Flatten slighly with fork dipped in milk

Pre heated oven
160c gas 4

15 mins approx until edges have turned golden.

Cool slightly then put on wire trays.
When completely cold paint bottoms ( of macaroons I mean)
with melted chocolate.

These are delicious if you like coconut.

Coconut is probably the one thing I'm not terribly fond of but painting bottoms definitely appeals! :twisted: :mrgreen:
