If bacon has dried up or is too salty, soak in milk for 10 minutes before blotting with paper towels and cooking.

Bacon joints and bacon rashers taste delicious when brushed with a little honey before cooking.

White wine left over at the end of a bottle can be added to vinegar to be used in dressings. Or - add a few drops of olive oil to opened red or white wine which you intend to use in cooking - it will keep much longer.

If you Christmas turkey is taking a long time to de-frost, speed things up with your hair dryer.

Turkey, ham or other left over cooked meat is eminently palatable when minced and mixed with melted butter, salt and pepper, and any fresh herbs to taste. Serve with crusty bread and salad, or in sandwiches.

Add cold tea rather than beer to a Christmas pudding mix. Apart from the thrift aspect, it stops the pud drying out and gives it a richer colour.
