Leftover meat can be finely chopped or minced, then seasoned with a few herbs, or a dash of Tobasco or Worcester Sauce. Depending on the amount it can then be used to stuff marrow, peppers, mushrooms, courgettes or savoury pancakes.

Leftover meat can also be transformed into a quick chilli con carni by adding chilli paste or powder and a tin of red kidney beans. NOTE always cook chilli powder in some oil first or it will taste raw. OR---

Cut leftover meat into cubes and add to a curry sauce, to be served with rice., OR ,mince it and mix it with fried onions and tomatoes for a pasta sauce.
Mixed with chopped cooked onion, herbs, and a can of tomatoes or some gravy. sliced leftover meat can be topped with mashed potato to become shepherds pie or cottage pie ( depending on if it is beef or lamb).

To clarify dripping from roast meat, put fat in a basin with just enough boiling water to cover it, stir well as it softens and melts. When cool, the clarified dripping will solidify on top and this can be removed leaving a tasty liquid underneath. This is ideal for soups or gravy.
