When cooking onions and waiting for them to turn brown, instead of turning up the heat, add a little demerera sugar to the pan and they will brown and soften beautfully on a low heat.without burning

To keep onions intact when baking cut a cross into the base.

Keep an onion on top of a glass of water in the kitchen where it will soon sprout. The sprouts can be used to give a delicate flavour to stews, salads and soups, etc.

When onions are plentiful and cheap it is worth buying in bulk. Store in a nylon stocking or tights and hang in a cool place.

To stop onions sprouting which makes them lose flavour, singe the the roots with a red-hot poker before stowing.

If you do not grow vegetables in the garden it is worth noting spring onions can be grown in a window box and used for flavour etc in place of onions.

cheers Penny.
