Cheese and almond plops - no sugar

3 oz plain flour
1 oz ground almonds
salt and pepper
2 oz butter or lard
1/2 teaspoon paprika
11/2 oz hard cheese, grated
1 egg yolk

For glaze (optional)
1 beaten egg
3-4 tablespoons grated cheese.

Sift flour and paprika, salt and pepper into a mixing bowl.
Cut the fat into the flour and rub in to a breadcrumb mixture
Mix in the ground almond and grated cheese.

Roll out and cut in 2" rounds, place on greased tray.
Brush with the beaten egg and sprinkle with the grated cheese
Stir in the egg yolk and mix to a soft dough.

For the glaze brush tops of biscuits with beaten egg and sprinkle with grated cheese.

Pre heated oven 180c/ 350g. gas mark 4
Bake 10 minutes or until set and golden brown.
Leave to cool slightly before removing from baking tray.
