Parmesan biscuits - no sugar

2 oz salted butter or marg
2 oz plain flour
pinch of ceyenne pepper
freshly ground black pepper
2 oz grated parmesan cheese

Cream butter,
Season the flour and gradually work into the butter with the cheese
Knead slightly and chill for half an hour
Roll out and cut in small squares or circles
Using a palette knife place on greased baking tray. Any left over bits roll into small balls and place on baking tray, press down with a fork.
Prick all biscuits with fork.

Pre heated oven 180c. 35of. gas mark 4.
Approx 10 minutes until set and golden.
Cool slightly.
Store in airtight container.

NOTE; best to buy a piece of parmesan and grate it. bought and grated cheese is not so full of flavour.
