Halibut in a Tarragon Mustard and Honey Marinade

I got fed up with farmed fish tasting so bland.
Experimented and came up with this which worked well.

Halibut in a Tarragon Mustard and Honey Marinade

Ingredients

2 Halibut Fillets
French Tarragon Mustard
Runny Honey
Zest of one lemon
Tablespoon of Balsamic Vinegar
Juice of one lemon
Tablespoon of Lemon infused Olive Oil
Salt and freshly ground black pepper

Method

Preheat oven to 180 degrees centigrade.
Place the 2 Halibut Fillets skin side down on 2 sufficiently large pieces of Cooking foil to form parcels.
Smother each fillet with the Tarragon mustard then the honey and sprinkle with Lemon zest.
Fold the foil to make a liquid retaining tray
Mix the lemon juice, Balsamic Vinegar and Lemon infused Olive oil and gently pour over the fish.
Season with salt and black pepper.
Finish folding the foil into sealed parcels.
Place on a baking tray and cook in oven for 15 to 25 minutes according to the thickness of the fillets.

Serve with Asparagus and steamed Jersey Royals and a glass or two of Muscadet.

I'm not keen on fish but that sounds lovely VM. :mrgreen:

By the way, does anyone know why some words are being double underlined? :dunno:
