Lamb with Braised Lentils, from the Low GI cookbook

About 10 days ago I ordered Anthony Worrall-Thompson's GI Diet book, The Low GI Book by Louise Blair and Healthy Eating for Diabetes. Here is a recipe that looks quite tasty from the Low GI Book. I haven't had chance to look right through all the books yet, but this one appealed as I flicked through.


Lamb with Braised Lentils


4 lean lamb steaks (gigot chops)
Grated rind & juice of 1 lemon
1 tbsp rosemary, chopped
1 clove garlic, crushed
2 lean smoked back bacon rashers, chopped
2 onions, sliced
1 carrot, finely chopped
1 celery stick, finely chopped
250g green or Puy lentils
450 ml vegetable stock

Rub the lamb steaks with the lemon rind, rosemary and garlic and squeeze over the lemon juice. Heat a large non stick frying pan until hot, add the lamb steaks and fry for 1 minute on each side.

Remove the lamb from the pan. Add the bacon, onions, carrot and celery to the pan and fry for 2-3 minutes until beginning to soften. Add the lentils and stock, then return the lamb to the pan and bring to the boil. Reduce the heat and simmer gently for 30-40 minutes until the lentils are tender and most of the stock is absorbed.
