Lining the bottom of the salad draw with kitchen paper will help to keep fruit and vegetables fresher.

Leftover vegetables can be chopped finely or pureed and added to soup.OR
Make a vegetable gratin. Fold whole vegetables pieces into a cheese sauce, top with a sprinkling of grated cheese and breadcrumbs, dot with butter and pop under a hot grill.

Adding a sprig of mint to boiling cabbage gives it an interesting flavour without the school dinner aroma.

I used to put mint with new potatoes - hadn't heard of doing it with cabbage before.
Must try that.
