Saki - Rice Wine

For Miriam and anyone else interested.

3 lb of ordinary pudding rice
1 lb raisins - chopped.
3 pounds ordinary sugar
1/2 teaspoon dried yeast

Melt sugar in 1 gallon of warm water.
Add rice and raisins.
Stir well
Sprinkle the dried yeast on liquid and stir.
Cover and place in a warm place.
Stir for a couple of times each day for two days.
Leave alone for 12 days.

Strain and into a Demijohn
Fit airlock

Leave and check every few days straining off each time sediment is at the bottom.
When finally clear it turns a golden brown.
Ready to drink then.

Very potent so watch out.
