Banana Boomerang

Using 2 or choice of bananas and ready -made puff pastry

Cut bananas in half lengthwise
lay on pastry cut under fruit to same shape
Brush fruit with melted butter and sprinkle top with sugar
Bake for 20 min till pastry is crisp and fruit cooked.
When fruit is cool, brush lightly with melted and sieved apricot jam, just to glaze.
Serve with a dollop of cream, ice cream or on their own.
