Banana cake - easy

prepare 1 lb loaf tin .
Preheated oven 190c. 375f. gas mark 5. time 1 hour.

1 lb ripe bananas, mashed
2 oz mixed nuts, chopped
4 fl.oz sunflower oil
4 oz raisins
3 oz rolled oats
5 oz wholemeal four
1/2 teaspoon almond essence
pinch of salt.

Mix all together well and spoon into prepared tin.

When cooked leave for at least 10 mins. in tin before turning out on to wire tray. cheers Penny.
