Daily Mail, Tuesday?

Postby DaisyB » Sat Jun 18, 2005 1:39 pm

Help. Does anyone have a copy still? I think it's Tuesdays or possibly Mondays.
There was a recipe for Banoffi Pudding which I know Dave will just love, but he has sent the relevant paper for recycling before I could copy the recipe out.
Please can anyone find the recipe for me?

I've just looked, someone else on the chat boards was asking the same question. It's a Prue Leith recipe. They suggest on the boards that we email the Mail. So I guess I'll have to. Thanks anyway.

Topdog found it for me, bless him.

Ingedients...
Butter for greasing
110g/4 oz unsalted butter
110g/4 oz caster sugar
2 eggs beaten
2 bananas mashed
3 drops of vanilla essence
110g/4 oz self-raising flour, sifted
Pinch of salt
........................
For butterscotch:
85g/3 oz granulated sugar
2 tbsp water
85 ml/3 fl oz double cream
.....................
Method.......
!. Lightly grease Pyrex bowl
".Make butterscotch: Put sugar and water into a heavy saucepan over medium heat.Allow sugar to disolve completely and then bring to boil.
Cook to a goldenj brown and remove from heat-- becareful as it may splutter and spit.
Stir to disolve any lumps of sugar. Pour into Pyrex bowl.
3. Make the sponge:Beat butter until soft, add sugar and beat until pale and fluffy.
4.Add beaten egg, beat well between each addition.
Add mashed banana and vanills essence.Mix well.
5.Fold in flour and salt.Mixture should be a reluctant dropping consistency.
^. Pile into a bowl and flatten with a spatula.
7. Cover tightly with clingfilm and microwave on medium setting for 8 minutes. Leave for 5 minutes.
8.Turn out and serve with plenty of whipped cream or vanilla ice cream.
