A good way to use up any left over chicken.
1 lb cold chicken meat
7oz canned chickpeas, drained
1 small onion. choipped
1 garlic clove, peeled and roughly chopped
2 teaspoons fresh or dried sage, finely chopped. (fresh is best)
6 oz breadcrumbs
1 egg, beaten
seasoning.
Process or mince chicken, chickpeas, onion and garlic.
Put in a bowl and mix in sage with about 1/3rd of the breadcrumbs
Bind with the beaten egg, a little at a time. Do not make too sloppy.
Season to taste
Spread remaing crumbs on a sheet of baking powder
Take a handful (about a 1/4 amount) and shape into a burger shape.
Roll this in the breadcrumbs until completely coated.
Repeat with rest (should make four)
Grill for 7 - 10 mins turning once, until coating turns brown.
Serve immediately. with rice salad and tomatoes. Or own choice.
