Sausage goulash - simple

Did this today, so good decided to post recipe. Very simple.


2 onions. sliced in rings
2 carrots " " " "
1 tablespoon oil
1 teaspoon paprika
1 good tablespoon plain flour
400ml can chopped tomatoes with herbs.
11/2 teaspoons dried herbs
1 teaspoon sugar
seasoning
1 lb (8 large) best pork sausages
1 oxo cube dissolved in ==
1/2 pint boiling water
Optional - small packet frozen peas or tin garden peas drained.


Heat oil in a large casserole pan
cook sausages gently until nicely browned all over about 8 mins.
remove from pan a cut each in half, leave on a plate
Put onion and carrots in the pan and gently cook until nicely golden, about 8 mins. stir so that onions do not burn
Stir in the flour, paprika and dried herbs.
Add the stock and tin of tomatoes
Bring to the boil and drop to simmering
Stir in the herbs and sugar.
season and cover pan. Simmer for 15 mins or put in pre- heated oven for 30 mins.
Oven 350f, gas mark 5.
Serve with baked potato, mashed potato or pasta.
