Tasty cauli - simple

This is simple and make a super quick meal.

1 medium cauliflour, separated into florets
salt for boiling
1 small onion, sliced finely
1/2 lb firm tomatoes, skinned, halved, and de-seeded. cut into chunks.
1 small clove garlic, crushed.
black pepper

optional for topping.
chopped parsley or
2 slices of bacon, cooked until crispy then chopped.

Boil the florets in salted water for about 10 mins.
Drain thoroughly. Arrange in a serving dish and keep it warm.
In another pan, melt butter and cook onions until soft.
Stir in the tomato and crushed garlic
Heat through and season with the black pepper. Top the cauliflour with the tomato mix.
Sprinkle with chopped parsley or the chopped bacon.

Serve with a large baked potato and sweet corn. (or own choice)
