Passion cake bars

Something different.

2 large eggs
6 oz soft brown sugar
31/2 fl oz sunflour oil
8 oz plain flour
2 tsp bi-carb
2 tsp ground mixed spice
1 tsp baking powder
8 oz carrots. chopped.
zest and juice of 1 orange.
4 oz walnuts, chopped.

whisk eggs, sugar and oil until pale, thick and fluffy
Fold in remaining ingredients.
Pour into prepared tin. approx 61/2" x 10. (lined with parchment and greased.

Preheated oven. 170c 325f gas 3.
Bake approx 35 - 45 mins until risen and firm to touch.
Cool in tin,

During cooking time, make the topping.
1 orange
1 oz caster sugar
9 oz cream cheese
2 tbsp icing sugar
1 tbsp clear honey.

Pare the zest of the orange finely and cut into matchstick strips
Toss strips in the caster sugar and leave to dry on greaseproof paper
Beat icing sugar, cream cheese and honey, with 1 tbsp of the orange juice and chill until required.
When cake is cold, remove from tin and spread with the icing.
Decorate with the crystalised orange zest.
cut into 12 bars.
Chill until required.
