If you don't have all the time in the world to steam Xmas puddings try this quick one.

10 oz mincemeat
5 oz fine shred- orange marmalade
8 oz molasses cane sugar
4 tablespoons black treacle
3 eggs - beaten
4 tablespoons whisky
4 oz frozen butter, coarsely grated
8 oz S.R..flour

TO SERVE -
Brandy butter or cream

butter and line a pudding basin - approx 21/4 pt size with greaseproof paper.
Put ingredients in a mixing bowl in the order as above, one at a time, stirring until all mixed.
Tip mix into prepared basin and cover with a circle of grease-proof paper.
Put bowl on a oven-proof plate and micro on medium approx 20-25 mins.
until an inserted skewer comes out clean.
Leave to stand 5 minutes.
Turn out and serve with brandy butter or cream.

cheers Penny.
