Coddled pork chops for two. Simple

CODDLED PORK (LAMB ) WITH CIDER

Small knob butter
2 Pork loin chops (or Lamb chops)
4 rashers smoked bacon, cut into small pieces.
1 carrot cut in large lumps
2 potatoes cut in hunks
½ a small swede cut in chunks
¼ of a large cabbage, cut in smaller wedges
1 bay leaf
3 fl oz chicken stock.
3 fl oz cider


Heat butter in a casserole dish until sizzling.
Fry pork chops two or three minutes on each side until browned.
Then removed from pan and lay to one side.
Tip the bacon, potato, carrot and swede into the pan and gently fry until a light brownStir in the cabbage and add the cider and stock.
Cover with a lid and simmer gently for about 20 mins. until vegs and pork are cooked.
Serve from Pan.
