This is a delicious and simple cake. I love to eat this one, could.nt remember if I put this on some time ago.

8 oz plain choc. (cooking choc will do)
1 lb plain biscuits
3 oz caster sugar
2 oz glace cherries
2 teaspoons instant coffee powder
2 oz butter (you can use marg)
1 small tin evaporated milk
2 eggs, beaten
2 oz chopped walnuts

METHOD

Put biscuits in a plastic bag and crush rough or fine with rolling pin
Mix in a bowl with sugar, cherries, walnuts and coffee.
Break choc and melt in a bowl over hot water

In separate pan
Slowly heat the butter and evaporated milk. Careful not to burn at this stage.
Combine with the melted choc, then gradually stir in the beaten eggs.
MIX WELL

Transfer to prepared tin, smooth the top and put in fridge overnight.
Cut as required.
That's all there is to it.

cheers and enjoy Penny
