Brunch pudding

4 oz bacon, rind removed
6 slices thick white bread, crusts removed, sliced in triangles
butter to spread
4 spring onions, sliced
3 oz grated chedder cheese
4 eggs. beaten
1/2 pint milk
6 tablespoons tomato and herb pizza sauce

Cook bacon under grill until crisp and golden. cut into small bite size pieces.
Spread bread with butter and pizza sauce.
Arrange half of these slices in a shallow ovenproof dish greased with butter. Scatter half the onions, bacon and cheese over.
Top with the remaining slices of bread arranging them in overlapping slices.
Scatter over remaining cheese, bacon and cheese.
Beat egg and milk together and pour over bread.
Leave to soak about 10 mins.

Stand dish in a roasting tin and pour boiling water in the tin up to half way up the outside of the dish

Bake 25 - 30 mins until golden brown.

pre heated oven. 180c 350f gas mark 4.

Serve warm with a salad.

Stop this now!!! I need to focus...any recipes combining lettuce and carrot???
