almost salad time. feta or goats cheese - simple

[Penny]

tbls olive oil
salt and fresh ground black pepper
1 oz olives, optional for decoration, or, black grapes
1 tbls fresh chopped oregano (or sprinkle of dried)

Salad
1/2 a cucumber, thinly sliced and laid round edge of plate

8 oz tomatoes. cut into 6 - 8 wedges
1 small onion, peeled and cut into thin rings
1 green pepper de-seeded and sliced thinly.
Combine last three items.
Mix well and place in centre of cucumber rings.

Combine oil and seasoning.
Pour over salad
Sprinkle with oregano
Cut cheese into small cubes and add to top of salad

Decorate with sprinkled olives or black grapes.
Chill well and serve with green salad or rocket, own choice.
