Rice and Chicken - simple

12 oz basmati rice
1/2 tsp ground tumeric
12 dried apricots
zest and juice of 1 orange
2 oz flaked almonds
1 red onion - chopped
6 chicken thigh fillets, sliced

To sprinkle when serving
1/2 oz corriander, or chopped parsley or drizzle of honey to serve.

Cook rice as per packet, adding tumeric to the water.
when cooked, drain and set aside to keep warm.
Soak the apricots in half the orange juice for 10 mins while rice is cooking.
Drain then cut the apricots in half, set them aside.
Toast the almonds in a large pan until golden, about 2 - 3 minutes.
Remove from pan and set aside.

Heat oil in same pan and cook the onion over a low heat for 4 - 5 minute until soft, then stir in the chicken slices, raise the heat and fry 6 - 8 minutes until thoroughly cooked thro'
Add cooked rice and apricots and stir well. Season to taste.
Pour in the remaining orange juice, sprinkle with the herbs and almonds.
Serve.
