Braised red cabbage - Simple

BRAISED RED CABBAGE


1 Small head red cabbage, cored and cut into thick slices
1 red onion. halved, cut into thick slices
2 tablespoons red or white wine vinegar
½ cup dry red wine
2 tablespoons extra virgin olive oil
1 tablespoon sugar
1 tablespoon honey
1 Bramley apple, peeled cored and sliced thickly.
1 teaspoon salt.

Put oil in heavy pan over medium heat and add onion.
Stir and cove
Cook for about 5 mins until onion is soft but not brown.
Add apple and cook gently until soft.
Add cabbage, and rest of ingredients, Bring to boil.
Reduce heat to simmer and cook, stirring occasionally, for 8 - 10 mins, until cabbage is nicely cooked and glazed.

Serve with pork or as a side dish.
