Mash with a difference ( vegetarian)

Did this simple one today. Very easy. Potatoes and mozzarella

Boil enough potatoes for 4.
Mash when cooked.
Put in an ovenproof dish and smooth top.
Cut up a lump of mozzarella ( 125g) 4 oz. into 8 chunks.
Bury the chunks in the potato.
Fork the top to make ripples.
Put in hot oven for 30 to 40 mins until top is nice amd golden.
Serve with salad or
as I did with hot beef casserole.
