Tasty Cheese Tarts - simple

Short pastry ie. 8oz flour, 4 oz fat etc
4 large tomatoes, skinned and sliced, sprinkled with worcester sauce
1/2 oz marg
2 eggs, separated
1/2 oz plain flour
1/4 pint milk.
4 oz cheddar, grated
1 level teaspoon mustard
salt and pepper.

Prepare pastry, roll out very thinly. cut and line bun tins or similar ( about 3" dia.) optional size
melt marg in pan, stir in flour, mixing well.
cook over gentle heat for about 1 minute.
add milk gradually stirring all the time.
bring to boil, continue stirring, for 3 mins.
Remove from heat and cool slightly.
Beat in cheese, mustard, seasoning and egg yolks.
Whisk egg whites stiffly and gently fold into cheese mix, little at a time.
Put a dessertspoon of mix in each tart tin (more if bigger tins)
Bake in re-heated oven. gas 5 375f 180c for 20 - 30 mins.
