Crunchy peanut butter cookies - simple

Experimenting today made these and they are simply lovely, crisp and crunchy.

4 oz marg
3 oz caster sugar
2&1/2 oz soft brown sugar
4 oz crunchy peanut butter
1/2 teaspoon vanilla essence
1/2 teaspoon bi-carb
6&1/2 oz plain flour

Mix marg and sugars.
Add peanut butter
add vanilla essence
add flour, bi-carb
(Optional for extra crunch add 1 oz chopped nuts and 1 tablespoon milk)

Put on greased baking tray in dollops.
Makes 24.
Lightly press down with back of fork dipped in milk.

180c, 350f gas4
Cook exacty 15 mins. then turn oven off and leave inside for 5 mins.
Remove from oven and when cooled, put on wire trays.
