Prince Albert Pudding

This recipe was found by our local squire, handwritten and must be about 150 years old. Sounds good.

4 oz butter
4 oz sugar
4 oz flour
6 oz raisins, chopped
2 oz candied peel
3 eggs. separated

Beat the egg yolks, butter and sugar to a cream,
In another bowl beat the whites to a froth
Add the flour, whites of eggs to the yolk mix..
Add raisins and peel.
Boil in a mould for 5 hours.

Serve with wine sauce.

That sounds worth a try, wonder if I can do it in the pressure cooker?
