Mushroom and Bacon Risotto!

I tried this the other day and its delish for those who like a risotto dish.

For 4 persons.

Ingredients

1.2 litres / 2 pints of boiling vegetable stock
A few strands of saffron. I did not use any as I did not have it
3 tablespoons of olive oil
1 small onion
2 cloves of garlic..crushed.
12 oz risotto rice
4 fluid oz dry white wine. (I used Stowells French dry in a small can.)
1lb of mixed mushrooms (I used closed cup ones.)
A good amount of bacon strips (I buy ready cut strips in a vacuum pack from the butcher.)
1 tablespoon of fresh parmesan cheese
Salt and ground black pepper

Pour 4 tbls of the boiling stock into a small bowl, add the saffron and set aside
heat the oil in a large, heavy-based frying pan (I used a wok)
Add the onion and the garlic and fry for two to three minutes
Add the rice and stir until coated in oil.
Pour in the wine (and don't drink some like I did!! :rolleye11: ) bring to boil and simmer for 1-2 minutes., stirring contantly (if you can stand up! :roflmao:)
In a separate pan. fry mushrooms in 2 tbls of olive oil fro 4-5 minutes or until cooked.
Add the mushrooms, and 1 tbls of fresh chopped thyme (neither had this eiher! :roll: ) to the rice
Add a ladle full of of stock. simmer until the liquid is has been absorbed, stirring continually.
Continue the process until all the stock has been used, adding the saffron and the soaking liquid with the last additon of stock
Remove from the heat and stir in the parmesan cheese and season well.

Each serving contains
168kcal energy. 6.7g protein. 15 g carbohydrates. 5.7 fat. Not suitable for freezing.
