Banana curry - (suitable for vegs)

5 under-ripe bananas
1 onion, finely sliced
2-3 tablespoons vegetable oil
1 tablespoon curry paste (Ticca)or similar
440.ml can coconut milk
salt and pepper
3 tablespoons coriander to garnish, if available

cut bananas in slices about 1 inch thick
heat oil in deep pan and fry bananas, brown slightly on each side.
drain on kitchen paper
add onion to the pan and cook for about 10 mins until soft, stirring now and then
put bananas back in pan along with curry paste and stir gently.
add half the coconut milk and stir well. Cook for 10 mins over a low heat. Add seasoning.
pour in remaining coconut milk and simmer until mix becomes thick and babanas break down a little.
Serve with Basmati rice and garnish with corinder.
