BANANA LOAF - SIMPLE

BANANA TEA BREAD

8 OZ S.R. FLOUR
6 OZ CASTER SUGAR
3 OZ SOFT MARG OR BUTTER
2 EGGS BEATEN
3 MEDIUM BANANAS (ABOUT A l1 LB) PEELED AND MASHED
4 OZ WALNUTS CHOPPED (IF NOT LIKED USE CHOPPED CHERRIES)
PINCH SALT PINCH BI CARB

METHOD

CREAM SUGAR AND BUTTER
MIX FLOUR, SALT AND BI CARB
GRADUALLY ADD EGG AND FLOUR TO CREAMED BUTTER
STIR IN THE MASHED BANANA
STIR IN WALNUTS OR CHERRIES

PUT IN LOAF TIN GREASED AND LINED

OVEN 35OF GAS 4 180C 1 1’4 HRS.
LEAVE IN TIN ABOUT 5 MINUTES TO SETTLE AND THEN TURN OUT ON TO WIRE TRAY

SERVE IN SLICES WITH OR WITHOUT BUTTER
