FRUIT LOAF - SIMPLE

1 CUP OF COLD TEA 1 CUP OF SUGAR
4 0Z CURRANTS 8 OZ SULTANAS

SOAK ALL ABOVE IN A BASIN OVERNIGHT.



NEXT DAY ADD 2 CUPS S.R.FLOUR AND ONE BEATEN EGG.1 OZ GROUND ALMONDS AND 2 OZ CHOPPED WALNUTS.

PUT INTO A GREASED AND LINED 1LB LOAF TIN.

GAS 4 325C 1 HOUR 15 MINS.

LEAVE IN TIN AT LEAST 30 MINS. TURN OUT ON WIRE TO COOL.
WHEN COLD SLICE AND BUTTER.


THIS LOAF FREEZES WELL SO I MAKE 4 AT A TIME.

I am not a good baker - love cooking, but not so good with cakes and pastries.

Apparently I hve been 'nominated' to run the refreshment tent at the Hospice Fete... :groaner: so guess I will have to get cooking now. No good me asking other people for goodies if I can't provide some myself.
Thisrecipe looks ideal.

Good for you, well done. The loaf is simple and very tasty Mazzy. As I said, I make 4 at a time, keeps costs of electricity down too. Worth a try and if liked , some people prefer it without the spreading of butter. Do try the banana loaf, that too is simple and lots of people tell me they love it. cheers Penny
